Chili Chicken

Chicken (cubed) 280gm
Red, yellow and green bell 20gm
peppers (julienned)
Green chili (julienned) 10gm
Onions (julienned) 20gm
Garlic (minced) 10gm
Chili sauce 25 mL
Oyster sauce 1tbsp
Soy sauce 1tbsp
MSG (monosodium glutamate) a pinch
Sugar 15gm
Chicken stock 250 ml
Corn flour 30gm
Flour 30gm
Egg 1 pc
Cooking oil as needed
Spring onions (sliced, as garnish) 5gm
Salt and pepper to taste

Method of Preparation:
• Mix the flour and 20gm of corn flour together. Add MSG, egg and mix together to form a smooth texture. Roll the chicken around the mixture and deep fry until golden brown.
• Heat a little oil in a fairly large pan. Add garlic, peppers, onions, chili, and sauté for a few minutes. Add chili, soy and oyster sauce. Add sufficient stock and bring to a boil. Then add corn flour dissolved in a little water, and the sugar, salt and pepper to taste.
• Add chicken and combine well. Finally, add part of the spring onions, and remove from heat. Serve hot garnished with the rest of the spring onions.
