Anda Paneer

Eggs 4 pcs
Cream 1tbsp
Paneer (cottage cheese), grated 1 cup
Onion, medium-sized, chopped 1 pc
Tomato, large-sized, chopped 1 pc
Red bell pepper, chopped 3tbsp
Green chilies, chopped 4 pcs
Ginger, julienned 2tbsp
Red chili powder ½tsp
Coriander leaves (cilantro), chopped 2tbsp
Oil 2tbsp
Turmeric powder ¼tsp
Salt to taste

Method of Preparation:

  • Soak ginger in cold water for 15 minutes.
  • Heat oil in a pan and add the onion. Cook over medium heat until the onions turn soft.
  • Add the green chilies and tomato. Sauté for 2 minutes, and then add red bell pepper. Cook for 2 more minutes.
  • Add red chili powder and turmeric powder, then sauté for 30 seconds.
  • Whisk the eggs with the cream, add salt and pour in the pan. Add ginger, reduce heat to low and cook the eggs until firm.
  • Add cottage cheese and cook for another 2 minutes.
  • Remove from heat and mix in the coriander leaves.
  • Serve hot. If desired, garnish with garam masala
