Fish RecipeImage Credit: Supplied

  Fish fillet 1/4kg
  Tamarind water 50mL
  Tomatoes, finely chopped 50g
Green chilies, finely chopped 2 pcs
  Ginger garlic paste 1tbsp
  Onions, finely chopped 100g
  Turmeric powder 1tsp
  Sprigs of curry leaves 5g
  Methi seeds 1/2tsp
  Salt to taste

Ingredients to Dry Fry:

  Fennel seeds 5g
  Coriander leaves 4 pcs
  Cumin seeds 5g
  Dry red chilies 7 pcs
  Coriander powder 5g
  Fenugreek powder 1/4tsp
  Garam masala powder 10g

Method of Preparation:
• Wash the fish in half turmeric powder mixed with water. Add garlic ginger paste. Let sit for 15 minutes.
• To make tamarind water, add salt on tamarind and a cup of warm water. Let it soak for some time. Filter it to extract a thick tamarind pulp.
• Fry all “dry fry” ingredients for 3 minutes; powder them finely.
• Heat a little oil in a pot. Add methi seeds until they splutter; toss curry leaves, onions, green chilies and tomatoes. Add the powdered spices, turmeric powder and salt, and saute for 1 minute.
• Add the extracted tamarind pulp. Pour 2 or 3 cups water depending on the consistency. Close the pot and cook for 10-15 minutes. Reduce heat to a minimum.
• Add the fish, close the vessel and keep it on low flame for 10-15 minutes until cooked.

Did you know...A common ingredient in many Asian, Indian and Caribbean dishes like this fish recipe, turmeric is rich in magnesium, iron and Omega-3 fatty acids.
