How to make Limbu Rubiyan

Ingredients (good for 4-5 portions):

Shrimps, jumbo             10 pcs
Lemon juice                   80mL
Ginger garlic paste        2tbsp
Coriander leaves           1.5 bunch
Basil leaves                   1/2 bunch
Kaffir lime leaves          3-4 pcs
Lemongrass                  10g
Cashew, roasted           30g
Garlic, roasted              2tsp
Salt To taste
Lettuce greens              150g
Peppercorns, crushed     5g
Extra virgin olive oil       30mL
Clarified butter For basting
Chaat masala                 1/2tsp
Carrot pickle                  75g

Method of Preparation:

Descale, devein and clean the shrimps under running water. Season with 50mL lemon juice, ginger garlic paste and salt; set aside for 30-45 minutes.

Blend coriander, basil and kaffir lime leaves, lemongrass, roasted cashew, roasted garlic and remaining lemon juice to a fine green paste. Marinate the shrimps in the green marinade, set aside for another 30-45 minutes then grill on a barbecue or cook in a tandoor.

Season the lettuce greens with salt, crushed peppercorns and olive oil.

Baste the shrimps in between with clarified butter. Serve the shrimps hot seasoned with lemon juice and chaat masala, accompanied with carrot pickle and seasoned lettuce greens.
