Nori Seaweed Salmon

Salmon fillet 800g
Nori seaweed sheets 4 pcs
Wasabi paste 40g
Green asparagus 120g
Pickled ginger 40g
Pickled cucumber 40g
Togarashi 40g 

For the Miso Vinaigrette:

Miso paste 40g
Pickled ginger 20g
Dijon mustard 2tsp
Honey 2tsp
Soya sauce 4tbsp
Rice vinegar 4tbsp
Corn oil 10mL
Sesame oil 4 drops
White pepper pinch 

Method of Preparation:

•Marinate the salmon fillet with wasabi and togarashi, then wrap it tightly with the nori seaweed sheets and leave in the fridge for at least two hours.
•Preheat oven to 180°C. Sear the salmon well from all sides. Place it in a baking dish and keep in the oven for 8 to 10 minutes.
•In a large mixing bowl, mix all the ingredients for the miso vinaigrette. Drizzle a plate with the vinaigrette and place the baked wrapped salmon.
•Garnish with green asparagus, pickled ginger and pickled cucumber. Top with togarashi. You may also garnish with a scoop of mashed potato flavored with a pinch of wasabi.
