Coconut cream 100mL
Mango or any tropical fruit as garnish
Ginger, grated (optional)
Method of Preparation:
•Rinse the rice in cold running water to remove as much starch as possible. Allow it to soak for 20 minutes, rinse again and then drain.
•In a thick-bottomed pan, place the rice and add milk. Slowly bring the milk to a boil and simmer for 15 minutes or until the rice is cooked. Be careful not to allow the rice to stick to the bottom of the pan and burn.
•Add sugar and coconut cream and continue to simmer for 10 minutes.
•Remove from heat, transfer to a serving dish and allow to cool.
•Spoon into small bowls and serve chilled.
•For extra flavor, top it with slices of fresh mango or any tropical fruit.
Note: Adding grated ginger during the cooking process will give you coconut and ginger-rice pudding.
