Steamed Prawn

River prawns (cleaned) 2 pcs
Green papaya (grated) 100gm
Garlic (chopped) 10gm
Ginger (chopped) 10gm
Chilies (chopped) 5gm
Tomatoes (blanched, skin removed) 50gm
Lemon (juiced) 1 pc
Fish sauce 1tsp
White vinegar 2tsp
Palm sugar 1tsp
Mint leaves (chopped) 2 pcs
Olive oil 1tsp

Method of Preparation:
For the Prawns
Marinate the prawns with some ginger and garlic. Place them in a dimsum basket or steamer and steam for a maximum of 5 minutes.

For the Papaya Salad
To make green papaya salad, peel the raw papaya and shred using a fine shredder. Marinate with half of the chopped chilies, ginger, garlic, half of the tomatoes (chopped), fish sauce and part of the lemon juice. Set aside.

For the Tomato Dressing
In a dish, place remaining tomatoes (chopped) then add the vinegar, the last of the lemon juice, chilies, mint, palm sugar and olive oil. Mix well.

On a plate, arrange the papaya salad in the middle and top with prawns. To serve, warm the tomato dressing first and drizzle over the dish.
